  1. 1pulsed slightly in food processor (or substitute instant oats)

Method

  1. Preheat oven to 180ºC (350ºF).
  2. Combine fat/sugar.
  3. Add egg, flavoring; combine.
  4. Add dry; combine.
  5. Add oats; combine.
  6. Scoop with No. 40 (orchid, 1 1/2 T) disher.
  7. Bake 10 minutes until edges begin to brown.
  8. Cool completely on sheet pan.
  9. Sandwich cookies with Marshmallow Cream Filling (see below) in between.

Method

  1. Combine all ingredients except flavoring.
  2. Heat on double boiler, whisking constantly, until 71ºC (160ºF).
  3. Remove from heat and whisk to stiff peaks.
  4. Add flavoring; combine.
